Canning your own meats can be dangerous. (Acid-based foods are *much* safer.) You might want to look at http://www.internet-grocer.net/realmeat.htm

Yes it can be dangerous if not properly handled. Only use a pressure canner and follow all sanitation procedures. Have canned meat for years with no problems, AS LONG AS YOU FOLLOW THE PROCEDURES.
